We grow mushrooms in logs. This began as a failed experiment where a variety of infected spore plugs were purchased without a sufficient amount of research. These plugs were placed in apple tree logs where they proceeded to rot. Now, we have researched enough to know what woods work with what spores, what time of year inoculation should occur, and the proper way to stack logs so that other funguses don’t cause infections.
Our land has an abundance of young and old oak trees growing in the woods. In the fall and winter months, we harvest a few young oaks for shiitake log inoculation.
Our land also has an abundance of tulip poplar trees. These are ideal for oyster mushroom inoculation, which is also completed in the fall/winter months. We have golden, pink, snow, and brown oyster logs. Also, we often find a variety of wild-growing oyster mushrooms in the forest.
